So my new channel is under review and it's been over a week and a half. It's a gaming channel. I was wondering, what will happen to the money that I am earning while my channel is still under review.

The money will stay with AdSense, you only start earning money through Freedom! as soon as you accept the invitation sent to you after the review on the YouTube Dashboard.
